Our top 5 low carb bread recipes

Farmhouse Loaf

Cook time: 45mins
Prep time: 20mins

Ingredients

  • 115g Butter
  • 6 Eggs
  • 170g Soft Cheese
  • 60g Ground Almonds
  • 30g Coconut Flour
  • 2 tbsp Ground Flaxseed
  • 2 tsp Baking Powder
  • 1 tbsp Chia Seeds

Directions

  1. Preheat oven to 180°C/160°C fan (350°F/320°F fan), grease and line a loaf tin.
  2. Start by melting the butter in the microwave or a small pan.
  3. In a bowl, beat the eggs together with the soft cheese and melted butter until smooth.
  4. Add the rest of the ingredients, except the chia seeds, and mix well. Leave the mixture to sit for 10 minutes.
  5. Add the mixture into the prepared loaf tin and sprinkle the chia seeds on top.
  6. Bake for 45 minutes. Remove once a skewer comes out of the middle clean.
  7. Take the bread out of the oven and allow it to cool before slicing.

Multiseed Bread

Cook time: 45mins
Prep time: 10mins

Ingredients

  • 7 Eggs
  • 115g Butter
  • 2 tbsp Olive Oil
  • 35g Sunflower Seeds
  • 20g Chia Seeds
  • 40g Pumpkin Seeds
  • 1 tsp Baking Powder
  • 200g Ground Almonds
  • 1/2 tsp Salt
  • 1 tbsp Poppy Seeds

Directions

  1. Preheat oven to 180°C/160°C fan (350°F/320°F fan).
  2. Put the eggs into a bowl and beat for 1-2 mins on high. Melt the butter in the microwave or in a small pan.
  3. Add the olive oil and melted butter to the eggs and continue beating.
  4. Add remaining ingredients except for poppy seeds.
  5. Scrape into a loaf pan lined with baking paper. Scatter poppy seeds on top.
  6. Bake for 45 minutes. Remove once a skewer comes out of the middle clean. Leave to cool and slice into 12.

Keto Bread

Cook time: 25mins
Prep time: 15mins

Ingredients

  • 70g Ground Flaxseed
  • 40g Oat Fibre
  • 190g Vital Wheat Gluten
  • 1/2 tsp Xanthum Gum
  • 1 tsp Salt
  • 240ml Warm Water
  • 1 tbsp Instant Yeast
  • 1 tsp Honey
  • 2 Eggs
  • 30g Butter

Directions

  1. Add all dry ingredients to mixing bowl except for the yeast and mix well. Set aside.
  2. Add warm water to a measuring jug and leave to cool until it reaches a temperature of 50-55°C. Please note – this can be done before you begin making the recipe.
  3. When the water has reached the desired temperature, add the yeast to the warm water and stir.
  4. Add the honey to the measuring jug of yeast and water and mix well, until all of the honey has dissolved.
  5. Crack the eggs into a separate bowl and give them a quick whisk.
  6. Heat the butter in the microwave until just softened unless it is already at room temperature.
  7. Add the yeast and honey mixture to a mixing bowl, with the eggs, butter and dry ingredients. Knead well in the bowl using your hands.
  8. Remove the dough from the bowl then place in a bread tin and cover loosely with plastic wrap.
  9. Heat a mug of water in the microwave for a couple of minutes until boiling to create a warm environment. This is to create a moist environment for your keto bread to rise.
  10. Place the bread in the microwave, shutting the door quickly and leave it to rise for 2-2 ½ hours. Replace the warm water every 10 minutes with fresh boiling water from the kettle, to keep a nice moist environment for the bread.
  11. Place the bread in a preheated oven at 190°C for 25 minutes. Remove the bread from the oven and leave to cool on a wire rack before slicing.

Soda Bread

Cook time: 30mins
Prep time: 10mins

Ingredients

  • 180g Ground Almonds
  • 2 tbsp Coconut Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 tsp Stevia
  • 1/2 tbsp Apple Cider Vinegar
  • 2 tbsp Sour Cream
  • 2 Large Eggs

Directions

  1. Preheat the oven to 180°C/160°C fan (350°F/320°F fan).
  2. Grease a cast iron skillet or any oven-safe dish and set aside.
  3. In a mixing bowl, mix the ground almonds, coconut flour, baking powder, salt and stevia. Then add the apple cider vinegar and sour cream slowly, while mixing.
  4. Whisk the eggs in a separate bowl and steadily add to the mix. Ensuring there are no clumps.
  5. Form an oval loaf with the mix and score the top with an X using a knife.
  6. Bake for 25-28 minutes or until golden brown. To check it is cooked use a toothpick and poke into the bread, if it comes out clean it is cooked. Allow to cool before slicing.

Cloud Bread

Cook time: 25mins
Prep time: 10mins

Ingredients

  • 2 Eggs
  • 2 tbsp Soft Cheese
  • 2 tsp Baking Powder
  • 1 tsp Olive Oil

Directions

  1. Preheat oven to 200°C/180°C fan (390°C/370°C fan).
  2. Line a baking tray with baking paper and lightly grease with oil.
  3. Separate the egg whites from the yolks, then add the soft cheese to the yolks and mix well.
  4. Add the baking powder to the egg whites and whisk until they form stiff peaks. Add ½ of the yolk and soft cheese mixture to the egg whites and fold through slowly. Then add the remaining mixture and repeat.
  5. Share out 4 even spoonfuls of the mixture on to the baking paper and bake for 20-25 minutes or until golden on top.
  6. Remove the cloud bread from the oven and leave to cool before serving with your favourite low carb toppings.
